For vegans, meat is simply out of the menu. But how do you kick start your day with a plant-based diet that tastes simply delicious? Let’s find out with these healthy vegan breakfast recipes.
Breakfast muffins
For these tasty muffins start by preheating the oven to 200C. Take a muffin tin and line it with cases.
Next, take about 100 g muesli and mix thoroughly with brown sugar, baking powder, and flour in a bowl.
Take apple, nut oil and add it into the dry mixture.
Take the mixture and add equally to the muffin cases.
With a bit of the remaining muesli mix with demerara sugar, pecans, and nut butter and pour neatly with a spoon over the muffins.
Now its time to bake; you need to bake for 25 minutes. Let the muffins rise and turn golden.
Vegan french toast
Start by taking maple syrup, add blueberries and gently heat them allowing them to pop and give off the juices. Set them on the side of the pan and take a shallow bowl.
On the bowl add soy milk, vanilla, almonds, cinnamon, and whisk.
Next, take a bit of oil and heat on a pan. Take a slice of bread and dip in the mixture and place it on the pan. Fry until the bread is crisp on both sides.
Repeat this with the rest of the mixture.

Coconut and banana pancakes
Take flour and baking soda and add in 2 tablespoons of sugar. Also, add a pinch of salt and mix.
Take coconut milk and add it to a bowl. Whisk so that it mixes completely with the fat. Take this and add to the flour mixture and whisk.
Take a shallow frying pan and pour a bit of oil.
Pour 2 tablespoons of the batter for each pancake. This makes it easy to flip them.
Add 4 bananas pieces onto each pancake and cook until bubbles form on the surface of the pancakes.
Turn them over carefully as they will be delicate.
Allow it to cook, once cooked you can serve.
Finally, take remaining coconut milk and add a bit of sugar and a pinch of salt. Simmer the mixture in a pan until it turns to a thick paste. You can use this as a sauce for the pancake.
Blackcurrant compote
This one is quick and easy. Simply take water and lemon juice and add in a large saucepan.
Let the mixture boil and then add blackcurrants and let them simmer until they have broken down.
To the mixture add golden caster sugar and bring the mix to 105°C.
Add the mix to a sterilized jar and let it cool.
You are now ready to add the mix to your cereals.
